Bubbles in Your Sour Dough Bread

Choosing healthier bread options over brioche this time.
I still prefer brioche taste wise but sometimes you have to choose healthy.
Those bread that has bubbles inside means they were fermented well.

Those bubbles is a good sign that the
fermentation process is active and successful.  

That means it is easier to digest, improves nutrient absorption,
and can result in a lower glycemic index.
