La Parilla at Waterfront Insular Hotel | Sooo Pinoy Food Trip na Pilipinas in Davao City
La Parilla at Waterfront Insular Hotel in Lanang in the city was our third stop during Day 3 of the Sooo Pinoy Food Trip na Pilipinas in Davao City.

Waterfront Davao came up with Laing Espesyal with the Bicol specialty “garnished” with Prawn and Lechon Kawali placed on top of the laing.
Interesting how Chef plated the dish with the prawn seating so pretty-licious beside three pieces of criss-cut fried potato and on top of crispy lechon kawali or deep fried pork belly. Just look at the photo below showing the back part of the plated Laing Espesyal dish. You could imagine how crispy and delicious the lechon kawali was.
The WIHD Executive Chef Francis Joseph Tugnao told us that he prepares the laing by himself from scratch since laing leaves are quite hard to find here in Davao though I told him I have seen them for sale at Robinson’s Supemarket in Abreeza Mall. My earliest memories of laing goes back to two of our kind neighbors who loves this specialty dish of the Bicolanos.
Laing is basically taro leaves (dahon ng gabi) cooked in gata or coconut milk plus other ingredients and seasonings that adds more flavor to the dish that I have somehow been cautious of before until this food trip series of Sooo Pinoy when I am personally surprised that I have learned to appreciate the dish I have somehow managed to stay away from for some reason. From now on, I will eat laing with no more hesitation for I have learned to love and appreciate the dish.
Next dish but definitely not the least is a fave Pinoy dish… Crispy Pata!
They call it Crispy Pata de Paella or deep fried pork trotters filled with paella! Talk about mouth-watering crispy pata, a fave main dish among most of us Filipinos or sometimes eaten as pulutan, with paella as filling which a Spanish rice dish that some if not most of us Filipinos have grown to love.
