Rekado Offers New Classic Filipino Comfort Food This Kadayawan 2017
When in Davao City this Kadayawan 2017 looking for a resto specializing in Filipino comfort food, Rekado Davao is a nice place in the city to dine in with family, friends and also for guests coming in town to celebrate this month’s festival.
Rekado has an array of our favorite Filipino dishes, some if not most of them have a twist or a mix of two or three dishes in one taking it to a level higher than the usual Filipino comfort food that we are accustomed to.
“For the Kadayawan menu, we are bringing in the classic Filipino dishes,” said Chef Pauline Benedicto-Mallillin.
The have the Oyster Dinakdakan which is deep-fried oyster meat tossed in a seasoned creamy dressing with onions and chilis dressing. This is a new dish added on the appetizer list.
Dinakdakan is an Ilocano delicacy usually using grilled pork parts and has cream sauce. In Rekado, they used oyster to level up their take on this popular Ilocano dish.
My fave perhaps during that lunch at Rekado would have to be the Crispy Dinuguan with Chicharon and Burong Mangga.
It is crispy yet tender pork belly on a rich stew. “We top our homemade burong mangga to balance the richness of this dish,” according to chef Pauline.
Corned Beef and Bone Marrow Bulalo. The broth of this hearty dish is simmered for hours with aromatics and flavorful beef cuts.
The corned beef is specially made for Rekado with no preservatives. This is served with a beautiful cut of bone marrow that is seasoned finely and oven baked.
I have to say this reminds me of my younger days at our parents’ home when we would always find it a treat when we are able to get the bone marrow part of what my mommy was cooking at home.
With the Inihaw na Liempo, the pork belly is charcoal grilled to infuse smokiness, while brushing with a flavorful marinade until flavors are well incorporated. This is another Filipino fave that is usually a part of your family meal.
Some of my lunch mates fave was their Chicken Adobo sa Gata.
This all-time Filipino favorite is delicious in itself but the coconut milk takes this dish to another level by having a more creamy sauce than the usual adobo that I am used to. They say this dish will make you ask for… “Extra rice please!”
A special for Kadayawan perhaps is Rekado’s Davao Seafood Platter that has the treasures from our sea so graciously provide: the tuna panga, bagaybay, bihod and imbao.
These are marinated in a spice paste and barbecued with a special marinade. A good platter to feast on with the family when dining in Rekado.
“That’s six new dishes on Rekado’s menu starting this Kadayawan month, and we’re making these permanent entries on our menu,” said Chef Pauline, “and we’re cooking up more additions in the coming months.”
Their dishes are described as how our loving mothers and grandmothers would have cooked it. Some of these recipes are prepared with a twist with the intent to heighten the flavors of your favorite dishes and excite our palate that for some foodies would make even perhaps make them mouth the word “Wow” while they make their eyes wide open. Imagine your loving mom cooking these dishes on your Sunday family lunch or dinner. The dishes Chef Pauline and Maam Lena served during our lunch at Rekado recently made me feel like that within. Of course I didn’t actually make my eyes wide open but every time they serve one of the new dishes in the table, in my mind, these dishes were made with passion and creative effort by the chef who wants to give the diners at Rekado something to make their food trip in Davao City this Kadayawan Festival filled with delicious memories of Filipino comfort cuisine!
While at Rekado, their delicious biko is a must-try for dessert!
