Spinach

I am no spinach eater but when hubby ordered this Fish Florentine at Alor’s which is baked dory fish with spinach and shallot cream sauce, I found myself eating the spinach like I have eaten it so many times before.
I thought it would taste “awful” but it didn’t and I ate more of it thinking this green leafy veggie is good for the eyesight and rich in lutein and vitamin A or beta-carotene if my memory serves me right, as well as anti-oxidants and flavonoids. Spinach is also good because of its anti-cancer and anti-inflammatory benefits.
So there you go! You may just be encouraged to eat more spinach more from now on!
